It’s time to break out the slow cooker! Despite a rather warm week in October the weather here in Virginia is rapidly cooling down. Just two days ago it was close to 80 and now it’s 50. That’s a 30 degree difference y’all. Not cool or rather not hot.
A couple of weeks ago we got a ton of chicken on clearance which was fantastic because we’ve had little to no chicken on clearance for months and I LOVE chicken so I was really sad to be missing it from my diet. Ironically enough now all we have in the freezer is chicken and I’m a little over it already. The chicken can’t win.
I think it’s because I was in a little bit of a rut, I’m trying to break free though, which is where this slow cooker Creamy Tomato Chicken Over Pasta comes into play!
This was easy thanks to the slower cooker and relatively inexpensive for those on a budget. We used canned items because we’re in the process of “Operation Clean Out Our Pantry” but you can easily swap out some of the ingredients for fresh/homemade ones.
It was a hit for both Kids! Kyla was slurped up the pasta like nobody’s business!
We had leftovers so the next day we served it over a pile of broccoli along side bacon wrapped asparagus. To be honest it was even better the next day!

- Set your slow cooker to the "Low" Setting.
- Empty the 8oz can of Basil, Garlic, Oregano Tomato Sauce into the slow cooker. Add the 1.5lbs of Chicken. Sprinkle half the Dry Italian Dressing Seasoning onto the chicken. Flip and sprinkle the remaining packet over the chicken.
- Spread the 14.5 oz can of Petite Diced tomatoes onto the chicken. Put the Lid on.
- 1 hour before serving time cut the block of cream cheese into cubes and place in the slow cooker.
- Stir occasional until the cream cheese has melted.
- 20 minutes before serving cook your pasta.
- Serve the Creamy Tomato Chicken Over Pasta.
- Enjoy!
