Right around this time every year the weather decides it has no idea who or what it wants to be. Is it Summer? Is it Fall? Is it Winter? It makes planning weekly play dates confusing and very up in the air. Are we going to be meeting at the park? The local children’s museum? Someone’s house? Outside play dates are my favorite because it means we don’t have to limit how many families can come but it’s not always doable.
For the last couple of years around this time of the year I’ve had some baking parties. While it can stink being stuck indoors we try to make the absolute best out of it. The kids help to bake while the mamas talk and then we all enjoy baked goodies. This year I decided to make Orange Pumpkin muffins with the help of some awesome KitchenIQ products.
I’ve made pumpkin spice muffins in the past and pumpkin chocolate chip bread but I this time around I wanted to switch it up. Inspired by my new KitchenIQ zester I decided I wanted to switch it up by adding more orange flavor to my favorite pumpkin muffin recipe. I love the added flavor that it gave to these muffins. While the flavor is familiar it’s still different and delicious.
Last year when I did a similar play date it was SO much fun but it was a little stressful. So many little hands and it was hard to keep track of where we were in the recipe so this time around I smarten up and I urge you to do the same: pre-measure your ingredients!
Kids don’t care as much about measuring! What they do care about is being able to dump the ingredients into the bowl and mix it up! They also love egg cracking so I left that part to them too. Since they don’t care about measuring save yourself some time and do it yourself. This made the making portion of our baking play date shorter than usual which gave me plenty of time to talk to the mamas about the KitchenIQ products I got to try. My personal favorite was the potato tool! It’s a brush, peeler and knife all in one. It made prep for play date lunch and snacks SO much easier. I’m obsessed with the little knife that comes with it. It snaps into the bottom. How cool is that?!
Worried about the knife getting dull? Don’t! That’s why KitchenIQ has the Edge grip! Not only was it B’s favorite product (he started sharpening all of our knives right away) but it was a favorite among the mom’s too. If you’re a mom you know that a lot of the dinner prep falls to mom and having a dull knife can make or break easy dinner prep! There are two sharpening steps which B absolutely loved. The first step is coarse and helps to sharpen your knife right away and the second is a ceramic rod for light touch ups.
Let’s get back to those muffins okay? They take about 20 minutes to bake and are amazing cold or fresh out of the oven. I love to split mine in half, toast it and add butter.

- Preheat your oven to 350F.
- In a large bowl combine 3 1/2 cups flour, 2 teaspoons cinnamon, 1/2 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/2 teaspoon ginger, 1/4 teaspoon clove, 2 teaspoons baking soda, 1 teaspoon baking soda and 1 teaspoon salt.
- In a medium sized bowl whisk together 2 cups sugar, 1 cup packed brown sugar, 4 eggs and 2/3 cup vegetable oil.
- Add, 2 cups fresh pumpkin puree, 2/3 cup Orange juice and 1 tablespoon orange zest.
- Add your wet ingredients to the dry ingredients and whisk until smooth.
- Line your muffin pan with cupcake liners. Fill cupcake liners 2/3 of the way with batter.
- Bake at 350F for 20-22 minutes or until a toothpick inserted into the center comes out clean.

The orange juice and Pumpkin Puree really make these muffins have a lot of flavor. I will have to make these for breakfast and they look easy to make. Thanks for sharing!
