I mentioned that I’ve only been using my blender to make smoothies and I decided that it was way too awesome for me to just be using it for smoothies. And just like that Facebook like always seemed to read my mind and shared with me “blender muffins”. At first I wasn’t really sure I got it. Why not use my stand mixer? Or *gasp* a whisk?
I’ll tell you why because I’ve never mixed up Chocolate Peanut Butter Blender Muffins. It was so ridiculously quick I could hardly believe it. I could literally make this every morning, that’s how quick it is. I threw everything in the blender, pulsed a few times and just like that I was done. I’ll even show you how easy it was.
Combine all ingredients except the chocolate chips in your blender.
Pulse until smooth and then fold in some chocolate chips. I used the mini kind since these are mini muffins.
Grease your muffin tin and then fill about 3/4 of the way.
Bake for 8-10 minutes at 400 degrees or until a toothpick inserted into the center comes out clean or mostly clean.
Serve immediately or store in an airtight container to eat later! This recipe makes about 12 mini muffins. You could easily double the recipe. They make a great quick breakfast, snack or even dessert. Everyone in the family loved them, I thought they were delicious and the kids devoured them. Even B said they were delicious and he’s always hard to please. Next time I may even add some Morniga for an extra boost.
There are so many different ways that you can play with this recipe to come up with something perfect for you! I can’t wait to play with it myself and come up with a few different variations. I’ve got a savory muffin in mind as a dinner side!

- Pulse until smooth.
- Fold in your chocolate chips.
- Grease your muffin tins and fill with batter about 3/4 quarters of the way.
- Bake at 400 degrees for approximately 8-10 minutes or until a toothpick inserted into the center comes out clean or mostly clean.
