I spent this morning drafting blog posts and preparing for the end of the week while my littles played with homemade play dough we had made earlier in the week with our playgroup. Before I knew it it was 2:30 p.m. and the dinner I was planning to make needed to be in the oven sooner rather than later since it would take a bit to cook. Spoiler alert: The wait was well worth it.
When I started to prep dinner, I quickly realized we were out of an item that is not only a major essential in our home but also a must-have for what I was going to make for dinner: milk. Instead of stressing out we rushed off to Target for a “quick trip.” If you’re friends with me in real life—or, heck, if you read this blog you know I love Target and a “quick trip” is hardly ever that. Today’s trip wasn’t much different (especially after running into an old college professor) but I was proud of myself that I still managed to keep it under an hour. We picked up the milk we came for, along with other staples like Market Pantry cream cheese and Market Pantry bagels.
Once we got home I rushed to get dinner in the oven. I was SO excited to make cheesy sausage and potato casserole but I didn’t want to be eating at 8 p.m.! This dinner was easy to put together; the hardest part was the wait. This is a dinner you have to prepare for; it’s no 30-minute dinner, but I promise it’s worth it.
Preheat your oven to 375 degrees Fahrenheit. Then thinly slice about 7 medium to large sized red potatoes. Split the potatoes in half and place half of them on the bottom of a 8-by-11-inch glass pan.
In a medium-sized pan, brown sausage over a low to medium heat. While the sausage is cooking, chop 12 ounces of broccoli and shred the cheeses. When the sausage is finished browning, drain the excess liquid. In a medium-sized bowl, toss the sausage, half the cheese, and broccoli together, and then spread evenly over the potatoes.
Layer the remaining potatoes over the sausage, broccoli, and cheese. Spread the remaining cheese over the top. Then, in a medium-sized bowl, whisk together 4 cups of milk and 3 eggs. Season with salt and pepper to taste. Pour the milk-and-egg mixture evenly over a casserole dish.
Place in the oven and bake for 90 minutes or until the potatoes are tender and the cheese on top is brown and bubbly. Let cool for 10 minutes before serving.
With the oven on for almost two hours by the time we finished eating dinner, we were more than ready for a cool treat. Luckily, we had the foresight to pick up some ice cream while we were at Target. It turned into such a nice treat, especially since we put together the kids bunk beds while dinner was cooking! I love that, over the last couple years, Target has become our one-stop shop for everything we need, from essentials like food to toys to electronics!

- Preheat your oven to 375 degrees Fahrenheit.
- Peel and slice your potatoes. Split in half and use one half to layer the bottom of your 8x11 glass pan.
- Over low to medium heat brown your sausage. While the sausage is cooking chop your broccoli and grate your cheese.
- Once your sausage is browned drain the meat.
- In a medium sized bowl mix together half the cheese, chopped broccoli and sausage.
- Spread over your layer of potatoes.
- Top with your remaining layer of potatoes, followed by the cheese.
- In a medium size bowl whisk together 3 eggs and 4 cups of milk.
- Pour the egg/milk mixture over the potatoes.
- Bake for 90 minutes or until everything is baked through and cheese is bubbly.
