The last week in NY was blazing hot. It felt like the summer I had been missing. As you would expect I quickly wondering why in the heck I was missing blazing heat. I think part of it was because without the heat the pool doesn’t feel as good. The ice pops don’t feel as good. Air conditioning doesn’t feel as good. Summer, just doesn’t feel as good.
And what’s summer without summertime snacks? Ice pops to be exact. I can clearly remember eating ice pop after ice pop during the summer. The ones I was eating despite being delicious weren’t all that good for you, and while my kids do get a taste of my childhood every once and a while I also want the taste of their childhood to be a little more wholesome, a better choice.
This go around of ice pop making, because yes, we do it often, is Peanut Butter Yogurt Ice Pops. Two simple ingredients, one delicious summer treat.
Just like most of the ice pops I make these are super easy to make. The hardest part, as always, is waiting for them to freeze. It’s as simple as whisking together 1 container of Yoplait vanilla yogurt and 1/4 cup peanut butter.
Then fill up your ice pop molds. 1 container and 1/4 cup peanut butter should make sure enough for 4 small ice pops. I had a little extra because I used a little extra peanut butter and yogurt.
I popped them in the freezer and two hours later they were ready to eat. My kids loved the peanut butter flavor.
As for me, I love making different ice pop creations using yogurt. They are the perfect snack and depending on the ingredients they can even make a great breakfast. On hot summer mornings an ice pop breakfast is exactly what you need. And my kids? They think an ice pop for breakfast is always what they need. With these pops, I don’t mind so much!
