Pancakes are go to for breakfast around here. Usually I make a double batch,the whole family will have as many pancakes as they can stuff into their mouths and then we freeze the leftovers. While I love just plain old pancakes most days I’m also a huge fan of taking a great base recipe and adding things to really spice it up and make it different.
Last month right before I went to Santa Monica for the Little Swimmers Tend Pool Party I made a huge batch of pancakes. I made some to enjoy right that very minute but the main reason I made them was so that I could freeze them. We’re huge fans of freezing pancakes. It’s so easy to do. Just freeze the pancakes individually on a cookie sheet and then store in a gallon freezer safe bag.
I had a little bit of a sweet tooth so I added Maple Extract, Coconut Flakes and White Chocolate Chips. Holy Amazing. These White Chocolate Chip Coconut Maple Pancakes were decadent but ridiculously easy to make thanks in large part to using your favorite pancake mix. If you prefer making your pancakes from scratch (I typically do) just make your pancakes as usual and add the maple extract, coconut and white chocolate chips.
They’re even more amazing smothered in farm fresh butter and drizzled with maple syrup. The boy and I love them and they’ve become somewhat of a staple. Just yesterday Mason requested them…again. I’m a little too happy to oblige!

- Whisk together 2 cups Original Bisquick® mix, 1 cup milk, 2 eggs and 1 Tablespoon Maple Extract.
- Fold in 1/2 Cup Coconut Flakes and 1/4 Cup White Chocolate Chips.
- Cook on your skillet on medium to high heat until golden brown on both sides.

I like adding blueberries and making blueberry pancakes. I love making pancakes. They are one of my favorite breakfast foods. I like these cute Coconut Pancakes. I will have to make them!
