This Christmas both B and I got Muddy Buddies in our stocking. B got Snickerdoodle and I got Peppermint they were so good and it was hard not to eat the entire bag in one siting. Which is one of the many reasons why I should have known making homemade St Patrick’s Day Muddy Buddies was a bad idea.
Bad in the fact that I want to eat the entire batch all by myself. But it was also a good idea because they were absolutely delicious. Although I’m fairly certain I’d have to fight B and Mason for them. Everyone seems to love this special treat! It’s sprinkled with shamrock sprinkles and Mint M&Ms making it nice and festive for St. Patrick’s Day!
Measure out 9 cups of Rice Chex cereal and set aside.
Melt 1 cup white vanilla baking chips, 1/2 cup peanut butter and 4 tablespoons butter.
Once the mixture is smooth pour the peanut butter mixture over the cereal stirring until evenly coated.
Split the mixture in half. Toss 1/2 with 2/3 powdered sugar until evenly coated. Spread onto parchment paper and let cool for 15 Minutes.
Pour 1/4 cup Sprinkles and 1 Medium sized bag (11.40 oz) of Mint M&Ms into the other half and mix together. Spread on parchment paper and let cool for 15 minutes. We have this great wholesale grocery store near us that has all sorts of specialty sprinkles for the holidays but if you can’t find shamrock sprinkles near you any green sprinkles will do!
Once your 15 minutes are up mix the two halves back together.
Serve immediately or store in an air tight container.
Now that I’ve made my own Muddy Buddies I will be doing it again for sure, it was so easy and delicious and I highly recommend it!
