Last year in my stocking Santa brought me a bag of Peppermint Hershey Kisses. We devoured the bag within a day or two. They’re only around for the holidays which is good because it makes it special but at the same time it makes me sad.
Add 2 large eggs and 1 tablespoon vanilla extract
Combine 2 cups all-purpose flour, 3/4 cup cocoa, 1 teaspoon baking soda and 1/2 teaspoon salt
Fold the flour mixture into the cream mixture.
Round about a tablespoon full of dough onto a cookie sheet lined with parchment paper. I use this to help me.
Bake for 9-10 minutes. While the cookies are baking unwrap a bunch of Hershey Peppermint Kisses. Resist eating them all. When the cookies are ready pull them out of the oven and cool for 2 minutes on the pan, then push a kiss into the center of the cookie. Tip: If you push the kiss into the center of the cookie sooner the kiss will melt as you can see some of mine did. For some of them I pushed the top down and made it into a little quarter sized circle! B said he preferred those. They taste the same though. Give the cookies another 3 minutes to cool and then move to a wire rack. Tip: If you move the cookies to the wire rack too soon they will fall through the wire racks and break apart. Forcing you to eat them.
Let cool for another couple of minutes and then devour! I couldn’t keep my hands off of them, I was starting to get scared that I wouldn’t have enough to take pictures with.
