My comfort food is pasta. I’m from New York, after Pizza I’m pretty sure it’s the most consumed food there. My weakness is Alfredo Sauce. I love Alfredo Sauce but I’m also super picky about it and will only eat it certain places which makes it difficult to ever order it out. So that’s when I decided I needed to start making it. And make it I did. And it was delicious but oh my was it filling and packed with calories.
While it’s fun to indulge at times it isn’t always good for you especially when you’re still trying to lose the baby weight. **Raises hand wildly**. So I bring you “Skinny” Alfredo Sauce with Basil Chicken. It’s made with Barilla Plus Pasta which is packed with extra protein, fiber and Ala Omega-3.
This is fairly simple to make. Start by making your pasta. Season the water with salt, pepper, basil and red pepper flakes. Cook the pasta to al dente. While the pasta is cooking clean and pound your chicken breasts until they’re thin. Season with salt, pepper and basil. You want them fairly covered with the basil
In a large sauce pan over low to medium heat saute 2 tablespoons olive oil with 8 cloves minced garlic. Cook for two minutes stirring occasionally. Add flour and let cook for one minute.
Whisk in 2 cups of chicken broth until smooth and season with salt and pepper to taste
Whisk in 2 cups of reduced fat milk. Bring to a simmer and let thicken, stirring occasionally. While the sauce is thickening saute the chicken over medium to high heat. Cook on each side for 5-7 minutes
While the chicken is cooking add in 1 1/2 Parmesan cheese. Whisk until smooth. Taste. Add salt and pepper to taste and then toss in your pasta and coat completely.
When your chicken is finished plate your pasta, slice your chicken into strips lay over the pasta, serve and enjoy!
