Monsters Inc. came out 12 years ago and way back then I absolutely loved it! It instantly became a classic for me. Needless to say when Monsters University was announced I was BEYOND excited. I couldn’t wait to see what it was all about. I loved that it was prequel and I was so excited to introduce Mason to the Monsters Inc family so I jumped at the chance to create something Monsters University related on behalf of Blueprint Social and Disney!
Disney has been airing Monsters Inc on the Disney Channel for a bit now so I made sure that Mason saw it. He loved it. Win. And then it came. Monsters University came in the mail. I’m not sure who was more excited, me or Mason! Okay I do. It was me. But quickly Mason became just as excited as me. To celebrate Monsters University coming out to DVD on October 29th I created Mike Wozowski Cupcakes!
This is the first time I’ve attempted to recreate a character and the reason why I’m sharing this tidbit with you is because I think it speaks volumes about how easy this is for you to do. Anyone can recreate these with a little help from Wilton and some plastic baggies! But we’ll get to that first let’s make the cupcake batter!
Preheat oven to 350 degrees F (175 degrees C). Line a cupcake pan with cupcake holders. In a medium bowl cream together 1 cup sugar, 1/2 cup butter, 1 teaspoon vanilla and 1 teaspoon almond extract.
In a small bowl combine 1 1/2 cup flour, 1 3/4 teaspoon baking powder and 1/2 teaspoon salt.
Add the flour and 3/4 cup buttermilk to the butter mixture. Alternate between flour and buttermilk starting and ending with flour.
Fill your baking cups 3/4 of the way with batter and bake for 18 minutes or until a pick inserted in the center of the cup cake comes out clean. While the cupcakes are prepare your Wilton Vibrant Green Baking Chips according to the directions. I found the chips in the Halloween section at Walmart. I melted mine on the stove top using a pot, water and a glass bowl. You can also use the microwave. I choose the stove top so I could keep the chocolate melted while I applied them to the cupcakes!
In a separate medium bowl combine 1 16oz bag Powdered Sugar, 1/2 Cup Butter and 3-4 Tablespoons Whipping Cream to make the vanilla icing.
When your cupcakes are ready take them out of the oven and let them cool on the counter top for 1-2 minutes before transferring to the refrigerator to cool quickly.
While the cupcakes are cooling separate some of the vanilla icing into three bowls. One while remain white (for the Eye). With the other two add food coloring to each bowl until you have black for the mouth and green for the eye color.
Once the cupcakes have cooled spoon on the melted chocolate like you would do with icing. Spread it out evenly and as smooth as possible. When finished place the cupcakes in the refrigerator for rapid cooling.
While the chocolate is hardening spoon the white icing into the corner of a plastic sandwich bag. Cut off the tip making sure it’s wide enough to create a large “eye” when you squeeze it out. With the remaining black and green you want to use an icing bag, tip and coupler to apply. Detailed how to can be found here. Note: I did not make the green icing as well instead I bought a tube of Wilton Blue decorating icing found in the Craft/Baking section at Walmart. Right next to it they had tips that attach directly to the tube. I got both for under $5.00.
By now the chocolate should harden. Use the white icing to create the eye, then place the green icing in the center to complete his eye and use the black icing to create his mouth!

- Using another plastic sandwich bag or using your own icing bag apply your icing tip and the coupler then spoon in the black icing to create the mouth. Repeat with another bag with the green icing for the eye. (Detailed directions provided in a link in post)
