B is a huge fan of berries in his ice cream so when I saw Gail Simmon’s Bumbleberry Summer Sundae recipe for Cascade Platinum I knew it would be the prefect thing to make for him. When I was telling him about the recipe he was getting so excited. It sounded deliciously refreshing. Best part? It’s really easy to put together and the presentations is amazing!
In a medium pot heat one cup of mixed berries, 2 tablespoons of sugar and 2 tablespoons of lemon juice over medium heat until the blueberries begin to burst and the other berries break down. This should take around 10 minutes. Remove from eat and stir in a pinch of salt.
Let the berries cool for a minute and then puree half of the sauce. Add the pureed sauce back to the berries then add the other 2 cups of mixed berries, stir well and allow to cool.

In a small bowl crush 3/4 cup of mixed berries and two tablespoons of sugar with a fork.
In a large bowl or your KitchenAid stand mixer whisk 1 cup of heavy whipping cream until soft peaks are formed.
Fold in the crush 3/4 cup of mixed berries.
To serve spoon 2 tablespoons of the sauce into 6 parfait, rock glasses or wine glasses.
Next add a scoop of vanilla ice cream
Sprinkle crushed graham crackers onto the ice cream.
Then add a scoop of raspberry sherbet.
Next add a scoop of vanilla, a sprinkle of graham crackers another scoop of raspberry sherbet and 1 tablespoons of berry sauce.
Top with the berry whipped cream
Serve immediately.
Then dig in and have your best bite
The dishes in this post were all washed in the dishwasher using my Cascade Platinum dishwasher detergent. I loved that I didn’t have to spot clean my dishes before photographing them!
