Thanksgiving isn’t even here yet but I’m already thinking about winter Holiday desserts.
I LOVE Thanksgiving it may even be my favorite holiday but the desserts don’t do it for me. I make Pumpkin Pie and all that but I don’t eat any of it. I much prefer to the mint flavored desserts of Christmas time. So I may be a little ahead of myself but I made Mint Brownies and they’re so delicious I HAD to share them here.
Start by using either a brownie mix, or what I’ve come to prefer–homemade brownies. Here’s the recipe that I use!
First preheat your oven to 325 degrees. Then whisk together 2/3 cup flour, 1/2 teaspoon salt and 1/2 teaspoon baking powder. Set aside.
Then melt 10 tablespoons of butter and 6 ounces bittersweet or semisweet chocolate in a bowl over a pot simmering with water
Once the butter and chocolate has melted remove from heat and add 1 and 1/4 cup sugar and 1 tablespoon of vanilla
Then add 3 eggs ONE at a time making sure that each egg is incorporated fully before adding in the next.
Stir until the mixture is smooth and shiny then add in the flour mixture
Butter or spray a 13×9 pan and add in the mixture
Bake at 325 degrees for 35-45 minutes. Check it at 35 minutes if a toothpick inserted into the middle comes out with some wet crumbs it’s READY. DO NOT wait until the toothpick comes out clean.
After the brownies are finished baking let them cool on the counter 5 minutes and then transfer to your fridge for 30 minutes. After 30 minutes begin making your filling.
In a medium sized bowl combine 2 1/2 cups powdered sugar, 3 tablespoons butter softened, 3 tablespoons whipping cream 2 oz cream cheese softened, 1/4 teaspoon mint extract and 5 drops green food color.
Whisk until creamy.
Spread the mixture onto the brownies
Then using the same method described earlier melt 6 tablespoons of butter and 6 oz of semisweet chocolate chips. Once it has completely melted pour it over the brownies and spread by tilting the pan.
Place back in the fridge and let cool for 30 minutes or until the top layer has hardened!

I found this recipe last year maybe and made if for St. Patrick’s day and these are the most addicting brownies ever. I love brownies, but there is definitely something about them with mint. So delicious
