When I made the French Toast Muffins I knew they would be even better with some syrup on top but leave it to me to not have any in the house. So I looked up a simple recipe and tweaked it a bit. For me it was super sweet and came out really thick so when the syrup was done in addition to adding the vanilla extract I also added an additional 1/4 of water and it did the trick, it wasn’t too thick or too sweet. Just perfect.

3/4 cup packed brown sugar
1/4 cup sugar
1 cup water
1/2 cup light corn syrup
2 teaspoons vanilla extract
1. In a medium sized saucepan mix together 3/4 cup packed brown sugar, 1/4 cup sugar and 3/4 cup of water until the sugars have all dissolved.
2. Bring to a boil over medium heat and let boil for an additional 14 minutes.
3. Take off the stove and add the 2 teaspoons of vanilla extract and 1/4 water, stir and let cool for 15 minutes.
4. Drizzle over French Toast Muffins, Pancakes, Waffles, French Toast or if you’re like B, your BACON!
