I like to bake on a whim. Is that weird? I was sitting in my house the other day and the kids were going a little nutso and I was like hmmm it’s now or never, I’m going to bake. And of course I decided it had be something with pumpkin! Tis the season and all! So here we go, yummy, easy pumpkin chocolate chip cookies! Whisk them together!
Put 1 cup of pumpkin puree, 1 egg, 1/2 cup vegetable oil and 1 cup of sugar in a medium sized bowl
Whisk them together!
In a medium sized bowl add 2 cups of all purpose flour, 2 tsp. baking powder, 1 1/2 tsp. cinnamon and 1/2 tsp salt.
Whisk them together!
Sift the flour and add it to the pumpkin mixture in batches!
After all the flour has been added it should look a little something like this:
Next you want mix the teaspoon of baking soda and teaspoon of milk together and add it to the mixture
along with the mixture of vanilla!
Mix it up! Then it's time to add the mini chocolate chips! YUM!
Place teaspoon sized dollops of the batter on a slightly greased pan
Then bake at 370 degrees for 10-12 minutes and out will come these babies
They have a cake like consistency that I really love, I'll be making these again
for sure!

These look terrific! I made pumpkin cookies not too long ago, but didn’t add chocolate chips. I’ll have to try that sometime! 🙂

Those look so yummy. I have to say I could eat pumpkin all year and since it is good for you even in a cookies form (right lol). I will have to try these the last pumpkin cookies I made were to flat. These look like chewy chocolate chip cookies!
