Bacon and Cheddar Cheese Stuffed Chicken

Need I say more? 

This is pretty much one of the best things I’ve had in a really long time. I love stuffed chicken and what better to stuff it with than bacon and cheddar cheese?! It was fairly easy to make and SO delicious! 

The first thing you need to do clean the chicken, then split the chicken about 3/4 of the way through so you can stuff the chicken then pound it so it gets thinner and season it with your favorite seasonings. When you’re all finished with that cook your bacon on the stove until it begins to get crispy. 

While the bacon is cooking shred your cheese, I <3 Cheese I can seriously eat a whole pound: 

Once the Bacon is crisped up a little bit you want to layer two pieces in the center of the chicken. 

Then add a bunch of cheddar cheese!

Then close it up. 

Some of the chicken breasts were super stuffed so I used toothpicks to hold them closed.  In case you were wondering if you used colored toothpicks the dye will run oopsie. 

Then you bake them for about 40 minutes at 350 degrees. When they’re just about finished sprinkle some more cheddar cheese on top. And before you know it out comes this not good for you at all deliciousness.


1/2 lb Bacon
1lb Chicken 
2 Cups Cheddar Cheese


1. Clean your chicken and split it about 3/4 of the way, then pound it so that it’s thinner and even. Then season your chicken, {I used AdoboSazon and a tablespoon of vinegar} and set aside.
2. Cook your bacon until it’s slightly crispy, so about 75% done. 
3. Next you want to put two pieces of bacon in each piece of chicken {so four pieces of chicken equals 8 pieces of bacon}. 
4. Now layer the cheese on top of the bacon. 
5. Close up the chicken, you can put toothpicks in the chicken to keep the extra stuffed chicken pieces closed. 
6. Baked for appx. 40 minutes at 350 degrees
7. 5 minutes before the chicken is ready sprinkle some cheddar cheese on top. 

Serve With: Mashed Potatoes and Green Beans
