Confession. I have never had a Pork Sirloin Tip Roast to the best of my knowledge before I picked it up from Costco on sale. I knew right away that I wanted to do a crock pot recipe with it. I love how tender the crockpot helps keep any pork dish. But how did I want to cook it. I googled pork recipes to gather inspiration and still appeal to the tastes of Mason and I, my six siblings and my parents.
And then I realized that what I needed to make wasn’t something fancy it was something that we all love, something that provides comfort to all of us. Something we would all want to eat again and again. So here it is. You need 6 ingredients that’s all!
This recipe will feed 10 people.
Clean 2 pieces of the pork and using a knife poke holes in the pork. Season each piece with one packet of Sazon and a layer of adobe, making sure to get the seasoning on both sides:
Set your crock pot on High (6 hours). Peel (optional) and cube 8-10 potatoes. Put another layer of adobe over the potatoes and pour water into the crock pot until the potatoes are covered. Stir to help distribute the seasoning.
Then place the seasoned pork pieces on top of the of the potatoes. Peel and chop 6-8 carrots. Place the carrots on top of the pork and fill the pot with water until it has covered a majority of the pork.
Once everything is done take the pork out and let it rest for 3 minutes before slicing into it
It was a huge hit with the entire family and as I mentioned before we had never used this type of pork cut before. My dad specifically asked me what kind it was because he loved how it didn’t fall apart in the crock pot like other cuts tend to do. I don’t mind when that happens but my Dad likes the slices!
Without a doubt I will be using this cut of pork again AND this family favorite recipe!
