Is it Monday again!? I LOVE having a weekly meal plan. It makes my life SO much easier. How did I not do this sooner? I can’t wait until I have a full month’s worth of go to meals! Looking back at last week’s menu, you may notice that there are quite a few things that are the same! We had more leftovers than I thought we would and changed a few things up. On Friday I ended up picking up ready to eat pizza at Walmart. Mason wasn’t feeling the chili and since I wasn’t going to be home I thought it would be fun for him to pick the dinner.
Sunday’s meal also got changed because B’s dad had some chicken that needed to be used and he didn’t need to cook it, so we got to cook it! We grilled the chicken and it was served with baked potatoes. I can’t remember what we had instead of the Baked Potato Bar but overall meal time felt way less stressful than it usually is. This week feels even less stressed since I was able to take some of the meals I had planned for last week and move them into this week!
Here’s what’s on the menu this week!
Salmon with oven roasted green beans and brussel sprouts.
Slow Cooker Chili (this was on last week’s menu but we ended up doing pizza that night).
Baked Potato Bar with cheese, butter, sour cream, broccoli, bacon and chili leftovers!

I’m also going to be making these for dessert this week. We’re also going to make a HUGE effort to eat our way through our pantry and our freezer. Which means I’ll also be making some roasted chickpeas at some point this week because they’ve been in the pantry for WAY too long! It’s time. I may need some help coming up with a weekly meal plan next week I don’t think a lot of what’s in our freezer and pantry is meal worthy. We shall see!
