Hash Browns are my weakness. Add Cheese and I’m hooked. Make it a casserole and I’m in love. A Cheesy Hash Brown Casserole with the Works to be exact. Something about casseroles are such a comfort food for me. This weekend though I took it a step further. I added sausage. AND Eggs. Making it an all in one everything I love breakfast casserole dish that is sure to please a crowd.
Or just B and I who have been eating it for breakfast every single morning since we made it. This breakfast can easily serve 12 people though! One average sized square is full of hash browns, cheese, sausage and eggs.
So be sure to know this makes a huge batch great for sharing but also great for eating all week long!
Start by preheating your oven to 350 Degrees Fahrenheit. Heat a medium sized pan on low to medium. Once heated cook 1lb of Sausage. While the sausage is cooking shred 16oz of Cheddar Cheese and set aside. Then in a large casserole dish spread out 2lbs of Shredded hash browns along the bottom of your pan.
Continue to stir the sausage. In a medium sized bowl whisk together 16 oz Sour Cream, 1 Can Cream of Mushroom Soup, 1/2 Tsp Salt, 1/2 Tsp Pepper and 1 Tsp Garlic powder and 3/4 if the shredded cheddar cheese.
Pour the sour cream mixture over the hash browns, add the cooked sausage and stir.
Whisk 12 eggs together season with salt and pepper to taste. Then pour over the hash brown mixture. Top with remaining cheese.
Bake at 350 Fahrenheit for 45-60 minutes or until the eggs have set.
Let cool for 5 minutes and then serve immediately.
