Let's talk about resolutions again. I know, I know I've been mentioning them a lot but that's because I'm making a very big effort to stick to them as much as possible. I'm rocking out the books resolution and busting my bottom with the taking care of me/losing weight portion. The being more domestic portion isn't following in line as much as I would love it too, which is a shame.
In an effort to continue to do well in ALL areas of my resolutions I've been utilizing my crockpot at least once a week. I'm in love with the days that I use it. Having dinner in the crockpot by 10am and knowing that by 5pm dinner will be done is all kinds of awesome.
My most recent slower cooker meal was what we've come to call Chicken (Crock) Pot Pie. Like all crock pot meals should be it's super easy to make and delicious!
Start by gathering your ingredients:
In your crock pot whisk together 1 can cream of chicken soup, 1 can cream of potato soup, 1 can of milk, 1 tablespoon garlic pepper seasoning and 1 teaspoon red pepper flakes.
Drain and rinse the peas and carrots and add to the pot.
Clean the chicken breasts add them to the pot submerging them as much as possible. Then drain and rinse the potatoes. Place on top of the chicken and sprinkle with a little more garlic pepper seasoning and red pepper flakes.
Cook on low for 6-8 hours. 15 minutes before serving grate 1 cup of cheddar cheese and sprinkle on top.
Then spoon some potatoes on to the plate, then the chicken smothered with the broth, carrots and peas.
This tastes so much like chicken pot pie minus the crust. It would amazing served with biscuits!
