From grocery shopping to cooking, mealtime is a family affair. Usually after I pick up Kyla from preschool we head out to do our grocery shopping. Food Lion is right by our house and her preschool making it a quick and easy stop. When mommy remembers I even bring their favorite cart so they can really help me shop.
While I’ve been trying to be really good at meal planning, sometimes I’m just running to Food Lion to grab something I need for that night’s dinner. On days like that we’re always looking for meals that fit these categories 1) Quick 2) Easy and 3) Delicious. If it’s something the kids won’t complain about that’s a plus too!
So into the cart goes something that I pretty much never hear them complain about, meatballs. Carando Meatballs to be exact.
While I happily make my own meatballs that doesn’t exactly fall into the “quick” category AND when I’m running to the grocery store after school quick is a must because before I know it, it’s time for bed! Rinse. Wash. Repeat.
Every night that I make dinner I have at least one of the kids helping me out. Usually it’s Kyla! She’s super into dinner and loves helping her mama. She also loves telling people at dinner that she did everything and I didn’t help at all. Thanks kid.
I LOVE that the kids like helping me in the kitchen, meatballs isn’t usually something I let them help with since it’s so messy but when we use Carando meatballs I let Kyla use a spoon to transfer them from the packaging to the saucepan!
I’m always looking for different ways to eat staples because my kids seem to only like a select group of foods. Luckily for me it includes some fruits and veggies! Usually when we’re eating meatballs it’s over pasta or with meatballs subs but I switched it up this time by making Italian Meatball Quesdillas. It’s like a meatball sub and a quesadilla had a baby. And let me tell you, that baby is yummy! This meal takes less than 30 minutes to put together and will be a hit for everyone!
Start by dicing an onion and four garlic cloves. Add it to a hot skillet with 2 tablespoons of avocado oil. Cook until translucent and then add 2 cans petite diced tomatoes, 1 can tomato sauce, 1/4 Parmesan and salt and pepper to taste. Stir it up.Once the sauce is hot add your Italian style Carando meatballs. Cover and let cook through.
Remove them from the sauce and slice. Heat another skillet on low to medium heat. Add your quesadilla, sprinkle shredded mozzarella onto the quesadillas then layer on some meatballs and another round of mozzarella cheese and finally another tortilla.
Cook on both sides for 3-5 minutes or until the cheese has melted. Cut into 4-8 slices using a pizza cutter.
Serve with a side of the sauce the meatballs were cooked in for dipping.
When B got home I asked him how dinner was and he RAVED about it, he told me how delicious it was and that they were some of the best meatballs I’ve ever made.
