Chocolate Chip Pumpkin Bread

Last week I went on a field trip with Mason. It was the first field trip I’ve ever done with him. Another milestone. A milestone I almost didn’t get to attend since I brought Kyla along. Luckily the owner of the farm relented and allowed us to stay. I’m so glad she did. I would have been so sad to miss this. There is so many fun things to do at this farm but the best part is pumpkin picking because it means we get to bring a pumpkin home and with a pumpkin comes pumpkin flavored deliciousness. First up on the menu?

Chocolate Chip Pumpkin Bread.

When B walked in the house the first thing he noted was how good it smelled. He said the same exact thing for the Pumpkin Muffins I made (recipe coming soon). I used to bake all the time and lately it’s been few and far between but fall and this amazing pumpkins are making me remember that I love to bake. I love the entire process. Seeing the ingredients come together and turn into something delicious.

In a large bowl whisk together, 1 and 3/4 cups all-purpose flour, 1 teaspoon baking soda, 2 1/2 teaspoons ground cinnamon, 1/4 teaspoon ground nutmeg, 1/4 teaspoon ground cloves, and 3/4 teaspoon salt.

In a medium sized bowl whisk together 2 large eggs, 3/4 cup granulated sugar and 1/2 cup packed brown sugar. Whisk in the 1 and 1/2 cups pumpkin puree, 1/2 cup melted coconut oil, 1/4 cup orange juice and 1 tablespoon vanilla.

Add the wet ingredients to the dry ingredients.

Fold in 1/4 cup chocolate chips.

Pour into a 9×5 loaf pan.

Bake at 350F for 60 minutes or until a toothpick inserted into the middle comes out clean. About halfway through the cooking process put aluminum foil over the bread to keep it from getting too brown. Once ready let cool on wire rack for 10-15 minutes. Serve warm or let cool.

Ingredients

1 and 3/4 cups all-purpose flour
1 teaspoon baking soda
2 1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves

1/2 cup packed brown sugar
1 and 1/2 cups pumpkin puree
1/2 cup melted coconut oil

1/4 cup chocolate chips

Directions

  1. Preheat your oven to 350F. Prep a 9x5 loaf pan with butter, non-stick spray or flour.

    I think my family would love this! They love to eat banana bread, so I really think they would like this flavor combination!
