Have you heard the news? I’m pregnant. And tired. And having a slight meat aversion. So I’m all about the quick and easy meal. If it takes about 30 minutes or less it’s my kind of recipe. Growing up our go to for quick and easy was pasta with homemade tomato sauce served over a variety of pastas and topped with mozzarella cheese. Every time I’m home it’s pretty much a certainty that we’re having pasta and tomato sauce. It brings me right back to being a kid, it makes me feel like I’m home. It’s a must in my little family in Virginia too and while I do make my own sauce with my busy lifestyle it’s not always doable.
Since I’m used to homemade sauce, I’m very picky about the store bought sauce I use and I’m always on the hunt for delicious alternatives to my homemade sauce. Tonight’s sauce adventure features Mezzetta’s Parmesan, Asiago and Romano tomato sauce. Mezzetta Napa Valley Homemade is made from 100% hand selected plum tomatoes with no added sugar and no paste. It’s been family owned and operated for over 80 years which I love.
Did I mention it takes no time at all? Okay, it does take *some* time but not much at all! Start by boiling a pot of water for your pasta choice. We went with penne for our dinner. Once the water is boiling and you’ve added the pasta combine in a separate pan add 1 jar of Mezzetta Parmesan, Asiago and Romano tomato sauce, 1 cup whipping cream, 1/2 cup of Parmesan cheese and 1 cup of fresh spinach.
Cook over low to medium heat until the cheese as melted and everything is well incorporated. Around the same time your pasta will be done! Combine with your pasta, garnish with Parmesan cheese and serve hot!
