Spicy Tomato Spinach Pasta Recipe + A Taste of Merlot Book Review

There are two things I love most in this world besides the obvious. The obvious being my kids, my family, shelter, warmth and a good cup of coffee. Apparently I love lots of things. Either way a good book and good food are pretty high on my list of things I love most list. And yes such a list exists. Combine a good book and good food I’ve died and gone to “Me time” heaven. That’s what I did here. I paired a Spicy Tomato Pasta with “A Taste of Merlot” by Heather Heyford.

I have a January 2015 reading goal which is 30 books, that’s 5 more books than last year, the second book on my list is “A Taste of Merlot” the second book in The Napa Wine Heiresses series. This book follows Merlot who goes by Meri and is one of three sisters belonging to a prominent wine family.

Heather Heyford learned to walk and talk in Texas, then moved to England (“Y’all want some scones?”). While in Europe, Heather was forced by her cruel parents to spend Saturdays in the leopard vinyl backseat of their Peugeot, motoring from one medieval pile to the next for the lame purpose of “learning something.” What she soon learned was how to allay the boredom by stashing a Cosmo under the seat. Now a recovering teacher, Heather writes romance, feeds hardboiled eggs to suburban foxes, and makes art in the Mid-Atlantic.

 

When it comes to the books I read a lot of them tend to be fun, quick and easy reads. It’s my time to sit back and relax and not worry about anything but the characters. A Taste of Merlot was exactly that, a fun, quick and easy read. Since this book was all about Merlot aka Meri I thought it best that I made a little something that paired best with Merlot, the wine. So I went with a Spicy Tomato Spinach Pasta that is the perfect accompaniment to this book since Merlots go well with tomato based pasta dishes! It’s also a spin on one of my all time favorite dips.

In a large pot cook 14oz penne pasta to al dente according to package directions

In a large skillet simmer 1 can petite diced tomatoes, 1/2 teaspoon garlic powder and 1/2 teaspoon onion powder. Let simmer for 7 minutes.

Tomato simmering with spices

Add 1 cup frozen spinach (2 cups frozen) 3/4 cup white cooking wines and 1 tsp lemon. Let simmer and reduce for 10 minutes.

Add spinach and white wine
Stir cream cheese in until it has melted completely.

Toss with pasta and top with Parmesan cheese. Serve and Enjoy.

Spicy Tomato Spinach Pasta Recipe

Ingredients

14oz penne pasta
1 14.5oz can petite diced tomatoes
1/2 teaspoon red pepper flakes
1/2 teaspoon garlic powder
1/2 teaspoon onion power
1 cup frozen spinach (2 cups fresh)
3/4 cup white cooking wine
1 tsp lemon juice
3 oz cream cheese
Parmesan Cheese

Directions

  1. In a large pot cook penne pasta to al dente according to package directions
