I’ve talked about my love for mint before. I never realized how much I loved mint though until I made Mint Oreo Brownies and B declared “They’re delicious, but why do you always have to make mint stuff?”
Imagine my horror at such a question. Why do I always have to make mint stuff? Is that a real question? The question should be why not. But since he asked why I guess I should answer that. For one I love that it has a delicious cool and fresh taste. On top of that it’s going to be St Patrick’s day soon and I feel like that just screams for mint desserts, much in the same way that Christmas call for it as well.
I’ve made Oreo stuffed brownies before and they were amazing especially since I stuffed them with chocolate chip cookie dough too but these just take the cake on so many levels mainly because you guessed it, they’re MINT Oreos. Mama loves mint.
I always used a homemade brownie recipe that I’ll walk you through now but you can used a box mix too which would make this extra quick and easy but I will say the homemade brownies adds an extra pizazz to this recipe!
Let’s get baking!
Preheat your oven to 325 degrees. In a small bowl combine 2/3 cup all-purpose flour, 1/2 teaspoon salt and 1/2 teaspoon baking powder
Line a 13×9 inch baking pan with parchment paper and layer appx 24 cool mint oreo cookies across it.
In a double boiler melt 6oz semisweet chocolates and 10 tablespoons butter. Once the chocolate has melted remove from stove and whisk in 1 and a 1/4 cup sugar and 1 tablespoon of vanilla.
Add in 3 eggs, one at a time, making sure each has have been completely mixed in before adding the next. Mix until smooth.
Add the flour mixture to the wet batter.
Pour the batter into your baking dish over the cool mint oreos.
Bake for 35-45 minutes. DO NOT wait until a toothpick comes out clean you will want *some* wet crumbs on it.
Once the brownies are done use your double boiler to melt 6 oz Mint Chocolate Chip morsels and 6 tablespoons of butter. Once melted pour over the brownies. Sprinkle with Green Mint Chocolate Chips and let cool.
Then be sure to share them before you eat a large majority of the pan yourself. I may or may not be speaking from experience.
