Peppermint Kiss Chocolate Cookies

Last year in my stocking Santa brought me a bag of Peppermint Hershey Kisses. We devoured the bag within a day or two. They’re only around for the holidays which is good because it makes it special but at the same time it makes me sad.

So when I was walking through Target and spotted a bag I did what any other sane person would do and I instantly picked up a small bag and then I picked up a larger bag. Because really. Who buys the small bag? And when it comes down to it you never regret buying the big bag. It’s not like you’re like oh man, these are so good, I wish I didn’t have more.
As soon as I picked up the bag I knew what I was going to do with them. I was going to put them smack dab in the middle of a chewy chocolate cookie.
Hershey Peppermint Kiss Cookies
Heat oven to 350° and line 2-3 cookie sheets with parchment paper.  Beat 1 1/4 cups butter and 2 cups sugar

Add 2 large eggs and 1 tablespoon vanilla extract

add vanilla

Combine 2 cups all-purpose flour, 3/4 cup cocoa, 1 teaspoon baking soda and 1/2 teaspoon salt

Fold the flour mixture  into the cream mixture.

Round about a tablespoon full of dough onto a cookie sheet lined with parchment paper. I use this to help me.

Bake for 9-10 minutes.  While the cookies are baking unwrap a bunch of Hershey Peppermint Kisses. Resist eating them all. When the cookies are ready pull them out of the oven and cool for 2 minutes on the pan, then push a kiss into the center of the cookie. Tip:  If you push the kiss into the center of the cookie sooner the kiss will melt as you can see some of mine did. For some of them I pushed the top down and made it into a little quarter sized circle! B said he preferred those. They taste the same though. Give the cookies another 3 minutes to cool and then move to a wire rack. Tip: If you move the cookies to the wire rack too soon they will fall through the wire racks and break apart. Forcing you to eat them.

Let cool for another couple of minutes and then devour! I couldn’t keep my hands off of them, I was starting to get scared that I wouldn’t have enough to take pictures with.

  3. Add 2 eggs and 1 tablespoon vanilla.
  4. Combine 2 cups all purpose flour, 3/4 cup cocoa, 1 teaspoon baking soda and 1/2 teaspoon salt
  5. Fold the flour into the cream mixture.
  6. Round about a tablespoon full of dough onto a cookie sheet lined with parchment paper. I use this to help me.
  7. Bake 8-9 minutes. While your cookies are baking unwrap some Peppermint Hershey kisses. When the cookies are ready take them out and cool for 2 minutes on the pan, then push a kiss into the center of the cookie. Give the cookies another 3 minutes to cool and then move to a wire rack.
  8. Let cool for another couple of minutes and ENJOY!

    Those look delicious!! In my mind, there really isn’t a better flavor combination than peppermint and chocolate!
