Sometimes you don’t feel like having the same old lunch. I’ve been drooling over mac and cheese lately. I haven’t actually made any but I’ve been thinking about it and finally I said ya know what?! Let’s just do it for lunch today. I asked Mason if he wanted Mac and Cheese with Bacon and he looked at me like DUH MOM was that even a question?!
Or at least that’s how I interpreted it, he actually just said “Bacon??” with a smile on his face. (that’s my boy).
So it’s starts off simple enough, you boil 8oz of dry pasta according to your package. While the water is waiting to boil start steaming your one cup of broccoli and cooking your bacon. I know I know multitasking at it’s best but it’s much easier than it sounds!

When the bacon is nice and crispy place them on paper towels and press down to get off the excess grease. Reserve the grease from the pan. It doesn’t have to be much you only need about a tablespoon and a half!
Take the bacon and place it in the freezer to cool, this will help you for when you go to chop up the bacon.
In a large saucepan on medium to high heat add 1 tablespoon and a half of bacon fat. This helps give it a little extra bacon flavor.
Next add 3/4 cups of milk
and 3/4 cup ranch
Add the shredded cheeses
And stir constantly until everything is melted and nice and hot!
Next add the pasta:
Mix it up and add the chopped bacon and broccoli.
Let thicken for 5-7 minutes and then ENJOY!
This is sure to be a crowd pleaser! Next time I make it I’ll probably triple the recipe and bring it to a get together!
8oz of dry pasta
5 Slices of Crispy Bacon
1 Cup of Broccoli
8 oz of Cheddar Cheese
8oz of Monterey Jack
3/4 cup of milk (I used 2%)
3/4 cup of ranch dressing
1 1/2 Tablespoons of bacon fat.
Cook pasta according to the direction on the box. While the pasta is cooking make your five slice of cripsy bacon. On a third burner steam your broccoli.
When the pasta is done strain, rinse and set aside. Once the bacon is done set aside some bacon grease and pat off the excess grease on the bacon slices and then place in the freezer (this will make it easier to chop into pieces).
In a large sauce pan combine the shredded cheeses, milk, bacon fat and ranch dressing over medium to high heat. Stir constantly until everything is melted and hot. Add the pasta and stir.
Take the bacon out of the freezer and chop into small pieces, add to the cheese sauce and pasta. Take your broccoli, chop it up and also add it to the saucepan.
Lower your heat and let thicken for 5-7 minutes.
